Feb 25, 2012: The day I made the decision to change to a healthier lifestyle.
To be honest with you, week one – three was a little difficult, because of trying to come up with new recipes and trying new foods. But, in the first week alone I lost 8 pounds. After the 3rd week I felt great. I used to have to come home after work and take a 1-2 hour nap every day because I was exhausted. Since I started this I have not once came home from work and taken a nap. I am not tired and have tons of energy. I have had people at work comment about new found energy.
I am so proud of this because I know that I didn’t do it with some fad diet, I did it by changing my lifestyle, exercising and eating healthy. When people ask me what this “diet” is called, I tell them…it isn’t a diet, it is a Non-Diet. So many people say “I can’t give up sugar,” and about 3 months ago I would have been one of them too, but not anymore.
Changing my life in this manor has been remarkably easy. Especially when compared to all the wasted energy, effort and time it took not to be healthy it is definitely way easier to change. I don’t miss anything that I used to eat because I know that if I really want something there is probably a healthy version of it out there, I just need to use my imagination and resources to find it.
Sometimes it is difficult to say no the cakes and cookies. Do I know that they probably taste better than my banana or apple, yes…but I also know that by saying no to the sugar that in the long run it is going to be even better. I know that the 3 minutes of instant gratification I get when I eat something bad for me isn’t even close to the long term gratification I get for the rest of my life for healthful living. I also know that if I really want it, that I can have it because it falls under the 20%!!!!

Hope all is going well at UNO. If you have a minute, I wanted to share my story with you regarding 80-20. After I bought the book from you, I read it cover to cover as soon as I had a free minute. Might have even been that night. I’ll admit that I was skeptical at first. It took me a while to get out of the “calories in, calories out” mind set that’s been burned into my brain for years. To make a long story short, I’ve seen a huge difference not only in my body, but the way I feel as well. To make things even more interesting, I’m taking in way more calories than I was before.
I also feel liberated. No more counting calories and wasting time weighing everything out. I also didn’t just embrace the nutrition portion of the book, but also took to heart yours and Peter’s recommendations on sleep schedules, eating schedules, workout schedules and overall well-being. As scary as it sounds, I used to eat lunch while I drive. Now I pull over, turn off the phone and all other extractions and take a half hour to myself to enjoy my lunch. Man, what a difference that makes. The only thing that I’ve found to be a challenge is going 100% organic. I’ve switched over much of my intake, but it’s not as easy to find these items let alone the extra cost. Hopefully the food industry will come full circle and recognize the demands of the market as we all become enlightened making these whole, organic foods less expensive and more abundant.
